Sometimes we just want a treat, this is easy and doesn’t require butter, eggs, or milk—and it comes together with just one pan. It’s quite low in fat, moist and tasty on it’s own.
A 9-by-13-inch pan and a fork is all you need.
INGREDIENTS
2 1/2 Cup flour
1 Cup sugar
1/2 Cup unsweetened cocoa powder
11/2 teaspoon baking soda
3/4 teaspoon sea salt
1/2 Cup coconut oil
1 1/2 Tablespoons apple cider vinegar
1 Tablespoon vanilla extract
1 1/2 Cup coffee, room temperature or water (but the coffee makes the chocolate taste richer)
DIRECTIONS
Add the dry ingredients to the pan, stir until combined with a fork. Make a hole in the centre, then pour in the oil, then the vinegar and vanilla, then the coffee or water. Stir well.
Bake at 350 degrees for 25 minutes.
Slice right out of the pan once it has cooled. Good on it’s own or with a scoop of ice milk or non-dairy ice cream on top
